What I Eat In a Day - Megan

Hey everyone! For this week's blogpost I thought it would be fun to do a little what I eat in a day. Hope you all enjoy!

Woke up, chugged about 20 oz of water that I keep next to my nightstand while I check my
phone and take about 5 minutes to wake up

Went downstairs and poured myself a cup of black coffee to sip on while I get ready and wake
up

I had a little bit more time before leaving than I usually do, so instead of doing overnight oats I
made ½ cup of oatmeal with 1/3 of a cup of mixed berries, ½ of a banana, 1 tsp of chia seeds,
and a tbsp. of almond butter

I have class from 9-12 but I always have my snack because it’s a lecture instead of a heavy
participation class so it’s easier to eat. I had a small apple and a handful of almonds that I carried
in my backpack pocket.

I had a coffee date with a friend set up so I met him at starbucks. I plan on working out as soon
as I get home so I didn’t want a heavy drink with lots of sugar so I opted for a black coffee with
some almond milk

Went for a 3.5 mile run! Running is my absolute favorite way to break a sweat and I feel the best
when I’m doing it. I believe that it is very important to find a way to work out that you genuinely
enjoy or else it becomes a chore. It also helps me release stress from the school day and sleep
better at night!

Finally food time! I prepared some cauliflower gnocchi from trader joe’s the night before, so all I
had to do was microwave it when I got back (which helped because I was STARVING after my
run), and I added some grilled chicken breast, arugula, and red pasta sauce to make it a meal!

Cooked some vegan ground beef and made 2 tacos using corn tortillas, lettuce, avocado,
tomato, and hot sauce

Cooked and sliced ½ of a sweet potato and cooked it with spinach, egg whites, and hot sauce

I was craving something sweet so I had a cup of coffee (decaf) and nibbled on some girl scout
cookies (do-si-dos, my favorite!)

One more snack before I go to bed! I was watching a movie so naturally I had to cook some
popcorn! I prefer air popped popcorn that comes with little to no butter, so I can still keep it
somewhat healthy and add my own butter if I choose.
