Busy Days, Easy Breakfasts - Violet

"Breakfast is the most important meal of the day."
I'm sure we've all heard it a thousand times, and while it may be true, eating breakfast can be hard when you're on the go. I know for me, the days I have morning classes (arguably when I need breakfast the most) are the days it's hardest to find time to eat. It's only getting more difficult as end-of-semester crunch time is coming, so for everyone else in the same boat, here's a list of my favorite easy breakfast options.
1. Yogurt + extras
Arguably the quickest and easiest, one of my go-tos is to grab a cup of yogurt and put some gluten free granola or fruit on it. It’s not the most filling, but it is Something and honestly that’s all that matters some days. It’s also something that’s easy to jazz up by changing yogurt flavors and toppings.
2. Oatmeal
More filling than yogurt, but a little more time consuming, there’s various ways to make oatmeal to suit your needs. For me, gluten free apples and cinnamon instant oatmeal is a godsend because it’s easy and tasty. Overnight oats are also a popular option. 3. Bread product + cream cheese
Usually bagels are the go-to bread product to be topped with cream cheese. For me, however, gluten free bagels are hard to find. What I do to circumvent this is before I get ready in the morning, I’ll put a slice of bread or two in in the oven to toast, put on a pot of coffee, and it’ll usually be ready by the time I finish my skincare routine. Using a toaster would probably speed things up, but if you don’t have one (like me!), you can also just put your bread product in the oven for a bit.
4. Muffins
Obviously, muffins aren’t exactly something to just whip up on a busy morning. However, if I know I’ll have several especially busy days in a row I’ll take some time on a Sunday or Monday night to whip up a batch. It’s relaxing, I feel productive, and I have a grab-n-go breakfast for the next several days!
5. Fruit
Fruit by itself isn’t super filling, so it’s one I tend to avoid as a standalone breakfast. However, sometime I just want something small and crave something fresh. In that case, I’ll usually go for a grapefruit or peach with a big glass of water. I know if that’s my whole breakfast I’ll need to follow it up with a snack or something in the next couple of hours, but it’s nice for lighter days.
